Low-fat buttermilk panna cotta with peaches

Indulge yourself with a lusciously healthy, low-fat panna cotta dessert.

  • 2 cups buttermilk

  • 2 tbsp caster sugar

  • 1 vanilla bean, split

  • 2 tsp powdered gelatine

  • 400g can Weight Watchers sliced peaches

  • Select all ingredients

3 Method Steps

  • Lightly grease four 1/2 cup-capacity panna cotta moulds. Place buttermilk (2 cups buttermilk), sugar (2 tbsp caster sugar) and vanilla bean (1 vanilla bean, split) in a medium saucepan over medium-low heat. Heat, stirring occasionally, for 6 to 8 minutes or until just heated through but not simmering (don’t boil). Remove from heat. Strain mixture into a heatproof bowl. Sprinkle over gelatine (2 tsp powdered gelatine). Whisk until gelatine dissolves. Set aside for 10 minutes to cool.

  • Pour mixture between prepared moulds. Cover with plastic wrap. Refrigerate for 4 hours or until set.

  • Carefully run a round-bladed knife around the edge of each panna cotta. Turn out onto plates. Spoon over peaches (400g can Weight Watchers sliced peaches) and syrup. Serve.
